Oh my, if only those two boxes of over-ripe pineapples had taken off eh from Kensington Market (in Toronto) eh. My brother bought them to make that nights dessert at the restaurant he had in TO years ago eh! Ever since then I break out in a rash around them things eh.

You’ve never had pineapple upside-down cake?! You’re in for a treat—it’s absolutely delicious! My mother used to make the most amazing one when I was a little girl, and I can still remember the buttery, caramelized pineapple topping. Trust me, you’ll be hooked after the first bite! Look up a recipe and make one for yourself and your family—it’s the perfect excuse to warm up the house with the oven on. Don’t worry, though, Joey doesn’t have to be the pineapple in your upside-down cake!
